How many hours have you spent staring at bottles of wine... and guessing? Guilty.

But when you pair the right wine with the right food... oh my goodness.

Every week on the Food and Drink Show we hear from the wine experts at Ake and Humphris who pair a wine with Steph Moon's Flavour of the Week. But it's not just Steph they help out... if you've never given them the task of helping you choose which wine you should choose to go with your dinner, trust us, you're missing out. It's not even expensive... you can pick up wine ranging from under a fiver to over £250!

You might even learn something new while you're there... for example.

  • Did you know if white wine is served TOO cold (the temperature which most household fridges will be set to) you're masking most of the flavour. This is a good thing if you're drinking cheap plonk, a bad thing if you actually want to taste your wine.
  • If you're not going to open your bottle of wine for a week or more and it's got a cork rather than a screw top (which there's nothing wrong with in case you're wondering), you should always lay it down. This will stop the cork drying out, letting air in (air is wine's enemy) and ruining the wine.
  • And in the same breath, if air is the devil's work when it comes to wine, after opening a bottle you should try to drink it within 2-3 days to avoid it spoiling (oh go on then).

Beth Parsons was cooking mushroom risotto and wanted to get the wine right, so she went to talk to Paul Auty at Ake and Humphris, and also got some great wine tips while she was there!
