How to cook the perfect roast this Christmas

All over Harrogate, Skipton and the Dales, preparation is well underway for the perfect Christmas dinner: turkey, roast veggies, and if you're really pushing the boat out, some pudding and cheeses.

Luckily,Class One Direct took Stray FM to some of the chefs they supply, to learn how to assemble the perfect Christmas meal.


Head chef Charlie from The Red Lion in Burnsall shared one simple trick for the perfect turkey: low and slow. Cook it at a low temperature and cook it slowly. He advises 130 degrees as the perfect temperature once you've greased your turkey in butter to keep the skin crispy and the meat juicy. 


Toby from The Fountaine Inn in Linton suggests taking the stress out of Christmas by preparing your vegetables in advance. Potatoes can be parboiled ahead of time and pre-sliced sprouts save you some prep time while still tasting great served with some lardons. All his produce comes fresh from Class One Direct, but his advice for anyone supermarket shopping is to check the veg is fresh and firm. 


Good news for anybody who doesn't like traditional Christmas Pudding, Head Chef Ashley from The Gamekeepers Inn, Threshfield, has put a Christmassy twist on a well known favourite. Combining mincemeat with baked American Cheesecake, he's made a desert that can be prepared well in advance to take some stress out of Christmas day. 

Cheese Board

While we were stuffing our faces with cheesecake, Joe from Class One Direct discovered how to put together an ideal cheese board with Andy from The Courtyard Dairy outside Settle. Rather than having lots of small pieces of cheese, Andy suggests having one great hard cheese, soft cheese, and blue cheese, opting for quality over quantity.
