One very simple way of making your Mum happy is too let her put her feet up, relax and enjoy some quality time doing... well, whatever she likes!

She might also, like most of us, love some great food. 

The Coniston Hotel Country Estate and Spa is no stranger to treating people like royalty when it comes to great food. There's the spa restaurant Nourish, the traditional Huntsman's Lodge and the elegant Macleod's Restaurant. 

New executive chef Simon Bolsover has been creating some spectacular flavours recently, but now has a really simple idea for you and your Mum...

How about creating your very own empanadas?!

It IS National Pie Week after all!

Empanadas at The Coniston HotelA traditional South America or Spanish snack, they are easy to make, quick and can be filled with almost anything! Here, for example, braised pork cheek with Yorkshire blue cheese fillings have gone down a treat!

Simply wrap your filling in a small circular piece of puff pastry, brush some egg around the edges so it sticks, fold it in half to create a semi-circular pastie shape, and crimp the edges with a fork to seal the filling. Brush the outside in egg wash which gives it a nice shine and colour, and then bake at 180C for about 10 minutes or until golden brown in colour. Feel free to sprinkle with herbs, salt and pepper once it's out of the oven!
