How Michelin starred chefs pair wine

Choosing the right wine for your meal can be a challenge. But in a meal with 7 courses, featuring complex flavours and prepared by Michelin star winning chefs, it becomes an even more delicate art. So how do TRUEfoods even begin?

On arrival at CHEFStable, you're treated to a glass of champagne while the unique concept of the menu is explained to you. Then, resident wine expert Hugh Carruthers - who has been buying wine since he was 16 - will put together your 'flight' of wine, a selection of wines designed to enhance each course.

Despite his early experience, Hugh recognises that finding the perfect pairing can be challenging. It's not just about complimenting the flavours, but sometimes also deliberately providing a contrast. With strong and complex flavours, and 7 courses to match, there is a lot to consider. 

First, the wine is examined visually, then it is nosed to examine the flavours, and finally sampled on the palette. The layers and structure of the wine are also taken into consideration, to ensure the wine is the perfect match to the food.

Fortunately, the complicated task is second nature to Hugh. His love of wine was born after buying his first bottle of wine at 16 years old. Now he visits vineyards around the world to learn absolutely everything about the wine served at CHEFStable. As well as affirming his expertise, this also means you're likely to try a wine few others have had before.
