Local produce cooking challenge - could you make this?

There's so much benefit in eating local, in season produce. But given a selection of seasonal produce, could you create a whole meal? We challenged Weetons to see what they'd come up with... 

The challenge: 

Given a box of fresh, seasonal produce from Class One, create and serve a delicious meal. The box contained items like carrots, Yorkshire honey, and peaches imported from sunny Spain. 

The challengers:

Andrew, Head Chef at Weetons, with Stray FM's Beth Parsons as sous chef. 

The dish:

Andrew used some of Weeton's home made chorizo along with the produce provided by Class One. They focus on local produce, but where it's simply better to buy from abroad - for example, for peaches - they have quality suppliers all over the world.

First up, the carrots were blanched - quickly boiled, and then put into lukewarm homemade pickling liqour made from equal measures white wine vinegar, white wine, and water with plenty of flavourful spices added like cinnamon, ginger, and chillies. 

To accompany a side salad, he made a home made salad dressing using Yorkshire honey, lemon juice, rapeseed oil and mustard, and a home made hummus made with chickpeas and tahini. 

The peaches were also boiled, but in a pan of boiling honey and then left to bake as the juices turned into a gorgeous, sweet pink sauce. 

Once all the food was prepared, Joe from Class One and Beth Parsons took on a plating challenge!
